VEGGIE SOUP


So it's mid-Summer.  A big and productive garden calls for a nice soup.  My Greek mom always has some form of soup ready to heat up.  This is in her style.

This soup is not particularly Greek.  But with some olive oil added it's a little more Greeky....Greekish....Greeklike...

This is EASY.  Anyone can make this and is about as healthy as yoou can get.


2 large onions, cut up
1 bunch celery, cut up
5 carrots, cut up
4 small zucchini, cut up
3 leeks, cut up
½ cup frozen Lima beans
½ cup cut up green beans
3 ripe tomatoes
3 Tbsp chopped parsley
1 ½ tsp salt
½ tsp pepper
¼ cup olive oil
croutons

In a large pot, place all ingredients except oil and croutons. 

Cover with water and vring to a boil.  Lower heat, cover and cook for about 90 minutes.  Add oil and cook 15 minutes longer.   

Serve topped with croutons. Da bomb..
